Smoked Salmon, poached salmon, prawn and vegetable cocktail, dressed leaves, marie rose sauce

Sauté wild mushrooms with garlic served on toasted ciabatta bread

Homemade chicken liver parfait with brandy and cream served with dressed salad and toasted ciabatta bread

Fillet of sole stuffed with a wild mushroom duxelle, finished with a champagne velvet sauce

Salmon with a walnut and pistachio crust, with spinach and champagne sauce

Pork escalope Holstein breadcrumbed with fried egg, anchovies and capers

Seared steaks bourguignon style, red wine sauce, mushrooms, shallots and pancetta

Calves liver, smoked bacon, caramelised onions, marchand du vin sauce

Supreme of chicken filled with a wild mushroom, spinach and tarragon duxelle, finished with a roasted onion and caper jus-lie

Confit of duck legs, slowly cooked in a garlic scented olive oil, then caramalised
